In today's war on obesity, elk meat is an
extremely attractive low fat food source. Elk meat is lower in fat than most
meat, poultry and fish products. One has to be careful in evaluating comparative
nutritive values of different animal species because it is so highly dependent
on what part of the animal was tested and how many samples were taken.
Nevertheless, on a fat percentage basis, reports show elk meat ranging from .07
to 1% fat. According to some reports (Human Information Service, USDA)
Using the USDA Nutrient Database for Standard Reference in the areas of fat, calories, cholesterol. Elk is by far the healthiest meat. Because elk meat is so low in fat, it is extremely high in protein. High protein/low carbohydrate diets are in vogue at this time. There have been reports that this high protein/low carbohydrate craze is the main reason for increased red meat consumption in the United States over the last two years.
Elk Meat's Nutritive Values Compare Favorable to Other Meats We Eat
Elk meat is a healthy meat choice. It's lower in calories and fat then many other meats. Also a good source of protein and iron, while having a cholesterol level that compares favorably with many of the other meats we eat regularly.

ELK Burger – (ground elk meat) is tuff to beat! When it’s cooked right, it’s so juicy and delicious. The main thing is to not over cook. Grill the burger for 3 minutes, no longer. The burger is 100% pure elk, so it is very lean. The meat will look a little pink when you take it off from the grill, but by the time you are ready to eat them, they will be done to perfection. I recommend using 1 tsp olive oil per package of meat to ensure juicy burgers.
Elk Roasts - Our roast average 2-3 pounds. When they are cooked in a low heat oven, you will have a mouth-watering delight!
Elk Steaks – Our steaks average 4-10 oz, depending on the cut. (4-5 oz for Rib eye, 8 oz for Porterhouse and T-Bone, 10 oz for Sirloin.). These are wonderful grilled or using a George Forman Grill. Grill 4-5 minutes depending on how you like your steak done. Be sure to try these for your next cookout! You will not be disappointed!
As a general rule of thumb, elk meat takes HALF the cooking time of beef.
